Vanilla Bean Frozen Custard & Treatery is Rio Rancho’s premier destination for premium frozen custard that rivals other ice cream and yogurt stores.  Vanilla Bean takes pride in offering a premium ice cream that thick, rich and creamy.  Frozen custard stores typically produce freshly-made vanilla, chocolate and Flavor-of-the-Day ice cream – and Vanilla Bean is no exception. Frozen custard desserts can be numerous – how about a root beer float, a hot Belgian waffle sundae, concrete or waffle cone?

We differentiate ourselves from typical yogurt and gelato stores by offering not only freshly made ice cream, but a variety of treats such as specialty popcorn, freshly made fudge and candies.  We also offer our very own proprietary line of locally produced Around the World with Chocolate bars, as well as espressos and pure vanilla extract.  Check out our gift baskets and tins and gift cards for special occasions and holidays.

Of course, with each of these programs pre-planning is super important and the success will be driven by your group’s members.  The first step is to have a meeting with your members to pick a time period for gift card sales or pick an in-store event date.  Make sure your members are ready, available and on-board with the plan.  Plan the date far enough in advance so that you have time to meet and coordinate with our shop, as well as have time to print/produce fliers or posters as needed.*

Got any other ideas on how we can help you fundraise?  We’re open to considering your suggestions!

(*) We do not incur the cost of printing and producing fliers but we will help design an order sheet or informational flier with our shop logo and your fundraising information.

So, What Is Frozen Custard And How Does It Differ From Regular Ice Cream?

The History of Frozen Custard

Frozen CustardFrozen Custard is a premium, or gourmet, ice cream treat which first originated on Coney Island, New York as a carnival treat at the turn of the century.  Legend has it that frozen custard was first created by an ice cream vendor who added eggs to ice cream as an emulsifier to prevent the ice cream from melting too quickly.  To his delight, and our gratitude today, a new type of ice cream was born.  Because of the ice cream’s unique smooth texture and richer taste, it became known as “frozen custard.”  Kohr Bros. in Charlottesville, VA., claim that their founder, Archie C. Kohr, invented the first frozen custard machine in 1919 and took it to Coney Island – where it is said that 18,460 cones were sold in the first weekend!

Vendors soon took this treat across the country to carnivals and circuses.  Shortly thereafter, frozen custard stands were found on the East Coast along beaches and boardwalks.  By the 1940’s there were hundreds of stands across the East Coast and Midwest.  The popularity of frozen custard continued to grow, especially in resort towns, as travelers had a chance to taste a new sensation.

Frozen custard took a little longer to march westward across the country but IS starting to make it’s premium appearance in states such as Colorado, Arizona, California and now New Mexico!  And no, it’s not “custard” really, it’s a very special ice cream made fresh daily.

So What Exactly IS Frozen Custard, You Ask?

Pistachio Frozen CustardWell, the Food and Drug Administration (FDA) has a thing or two to say about that!  By definition, frozen custard must have at least 10% butterfat and 1.4% egg yolk.  The amount of air, also known as overrun, truly separates frozen custard from traditional ice cream.  Traditional ice cream has as much as 100% overrun, which causes ice crystals to form.  Frozen custard has 20% overrun or less.  This reduction of air is what give frozen custard its silky smooth texture.

True frozen custard is a very dense dessert. Soft serve ice creams may have an overrun as large as 100%, meaning half of the final product is composed of air. Frozen custard, when made in a proper continuous freezer will have an overrun of about 20% depending on the machine manufacturer (an overrun percentage similar to gelato).  Air is not pumped into the mix, nor is it added as an “ingredient” but gets into the frozen state by the agitation of liquid similar to whisking a meringue. The high percentage of butterfat and egg yolk gives frozen custard a thick, creamy texture and a smoother consistency than ice cream. Frozen custard can be served at −8°C (18°F), warmer than the −12°C (10°F) at which ice cream is served, in order to make a soft serve product.

Another difference between commercially produced frozen custard and commercial ice cream is the way the custard is frozen. The mix enters a refrigerated tube and, as it freezes, blades scrape the product cream off the barrel walls. The now frozen custard is discharged directly into containers from which it can be served. The speed with which the product leaves the barrel minimizes the amount of air in the product but more importantly ensures that the ice crystals formed are very small.
